Wine Profile
Vineyard Notes
This wine is made of a blend of 50% Pinot Noir and 50% Chardonnay from the Savoy Vineyard near the town of Philo in the Anderson Valley Appellation. The Pinot Noir is Dijon Clone 114, and the Chardonnay is the Prosser selection, one of the original 1991 plantings at Savoy.
Production Notes
The fruit was harvested on September 4th at 18.9° Brix, whole cluster pressed to tank, and settled for 24 hours. Fermentation occurred in neutral puncheons and barrels. The base wine was bottled after ten months sur lie and aged en tirage for four years before disgorging.
Winemaker Notes
The 2018 Brut from Savoy vineyard is the second sparkling wine produced by FEL. Following the traditional méthode champenoise, this wine was made from an even blend of Pinot Noir and Chardonnay. Pinot Noir brings riper, more fruit forward flavors of apple, fresh white fig, and peach while the Chardonnay adds a zesty freshness of lemon peel and gooseberry. The base wine was aged en tirage for over four years allowing the palate to build complexity and depth.
